Navionics Gold or Platinum??
Can anyone shed some light on which would be better for the Gulf of Mexico??

Typically the Platinum series are a higher quality.

And I think Platinum has a picture of the port/channel, Google Earth type SAT view, but never worked with that.

I agree, if you get the best, you get the best. I dont think you are getting anything you wont use. Move up with the technolegy.
