Carp Burgers?
Not a fish that I would spear, but as Carp have reached plague proportions in rivers and lakes has anyone tried them in a fish burger? Slimy creatures with quite a few bones is there a recipe for them? In Russia and Ukraine Carp are one of the main target species for spearfishermen, so there must be recipes.

Searching found this recipe. Looks like ground meat is really the only option.
2 pounds Asian carp fillets, ground 1/2 cup panko bread crumbs( this is optional) 2 tablespoons fresh garlic, chopped 2 tablespoons olive oil 1 tablespoon lemon zest 4 teaspoons dry oregano or 2 teaspoons fresh oregano 4 teaspoons black pepper 1 1/2 teaspoons kosher salt 1/2 teaspoon nutmeg ________________________________________ Directions Combine all ingredients except panko crumbs. I like to grind the fish twice to make sure there are no more bones and to blend the spices. Add panko crumbs and form into patties or choose not to use breading. The burgers will be a little softer but just handle with care. If you want to add cheese, use a soft cheese. Form a small ball of cheese and insert into the center of the burger. Form the burger around the cheese. Cook for about 5 minutes per side on a hot grill, the cheese will start leaking out when they are almost done. This is a very cool thread. I'm all about eating "the weird stuff".
If you want carp burgers, you'd better have one heck of a grinder. There is no such things as a carp fillet. There are countless thin y-bones and these are very sharp. A carp burger could probably be achieved using very long cooking times and then grinding- I routinely cook bones of cattle and chickens for days on end and then these can easily be chewed. Fish shouldn't be any different. I've caught carp in China in pay-to-fish mudholes and we brought them back to the company kitchen where they were cooked with a thick brown gravy. In China, the relationship with the dinner plate is very different compared to the west, where its considered gross to do anything other than to swallow everything that enters the mouth (or in an emergency to expel it out of sight into a napkin). But in China things are shoveled from the plate into the mouth where they are processed and then bones, scales, shells, antennae, or what have you are spit back onto the plate. My Chinese colleagues were proud of me for quickly adapting to this eating style. Once I got the hang of it, eating carp was less difficult for me (but still a challenge).
