Hi everyone
I don't live In the keys but this is the closest to me. I spearfish mainly with my brother. We don't shoot huge fish but it feeds us so that is ok. The fish we shoot the most is called locally mono they are silver and grow to about 14" to 16" long. They are stupid and easy to peg off two or three. Then they get a bit skidish. The best fish are rock and red hind for me and locally called porgies for my brother.

We got porgies so big in the keys, sometimes bigger then the snapper that im supposed to be chasing. Walls of them, they're skiddish little bastards too.
Sharpen that knife up if you are trying to filet them, but boy the are a strong flavored fish. From what I remember their meat looks just like snapper, but tastes just like AJ... |

not sure if your Porgies are the same as ours in RI, but they taste great raw and cooked. Keepers for us are 10".
very skittish. |

No porgies here are probably a kind of sheepshead they have the same head shape

I have always found the Porgies to taste a bit like iodine, so I don't like them.
Here is one that was caught Hook and Line. I don't spear them anymore since i don't like them. |

Holy Scup! That's what we call them. Yes same as our porgie exactly, but yours could eat the ones we get whole.
I think our porgie might taste better because they are smaller and younger ,?? RI keeper is 10" |

Porgies are great fried. Very dense. They snap when you bite into them almost like a chicken finger. If you dont stone them, a shot behind the eye will typically tear out. They dont have a lot of bone in the dorsal area around the head to keep a spear captive.
Taste is good but I will agree they have a slight after taste. Not sure if I would call it iodine, but it's there. |

I love them! They usually hang out and swim together in schools with Mutton snappers.

That's the biggest freaking porgie I have ever seen most around here are like 10" That thing could eat three of ours and still have room for a rock hind
